Day 18 is complete*, and my mind has started to shift to how I’ll adjust back to “normal life” after the challenge. I’m still pondering it, so I hope to have a lightbulb moment before this thing is over! 🙂
All right, let’s look at today’s stats.
Breakfast: Meal replacement shake
Lunch: Spinach salad with goat cheese, olive oil, and balsamic vinegar; Leftover tuna cake;Â Baked potato
Supper: Chicken stir-fry over brown rice; Fresh pineapple — I made a doctored-up version of stir-fry for my family with honey and soy sauce, but pulled out some of the chicken & veggies for me before I added the sauce ingredients.
Snacks: Banana; Unsalted peanuts with raisins; Lowfat plain yogurt with diced apple and cinnamon
Tea of Choice: Candy cane green tea
Exercise: Interval training
Energy Level: Good! We’ve had gloomy skies here this week, but my energy levels have stayed steady despite the depressing weather. 🙂
Other Observations:
One thing I’ve really enjoyed about doing this challenge is all the AMAZING fruits and vegetables that are in season during the summer! I seriously drool every time I go grocery shopping. The variety makes it so much easier to have fun with it.
If you’re contemplating diet changes, I highly recommend being strategic with your timing. A new diet can certainly be started in the winter, but it might be more challenging to find tasty, ripe produce that helps you reach your goals. If you establish good patterns during prime produce season, it will help you stick to your habits when the selections dwindle later in the year.
