Food Choice Wednesday: Thanksgiving Feast

Welcome to Food Choice Wednesday! (not to be confused with Fashion Choice Wednesday)

I figured since we’ll all be feasting next week, we could start our mouths to watering right now. (Aren’t you glad you visited today? :) )

So if you have to choose one–and only one!–of the following sides to enjoy with your Thanksgiving feast, which would you pick and why?

Pumpkin Torte Recipe

I don’t know about you, but I’m already reveling in the season of pumpkin. Yum!

The recipe I’m sharing today isn’t necessarily low-calorie and it isn’t the easiest thing in the world to make. But rest assured, it will be worth it in the end! Oh yes, my friends, you will thank me when you taste this stuff.

Pumpkin Torte

(This is a family recipe, but the photo above is from a similar recipe from Taste of Home Magazine. I’m sure theirs is equally as good. :) )

Crust:
24 Graham crackers – crushed (use full double crackers)
1/3 cup Sugar
1/2 cup Margarine, melted

Mix the three ingredients and press into 9 x 13 pan.

Next layer:
2 Eggs, beaten
3/4 cup Sugar
8 oz Cream cheese

Mix the three ingredients together; pour over crust. Bake at 350 degrees for 20 minutes.

Pumpkin layer:
2 cups Pumpkin
3 Egg yolks
1/2 cup Sugar
1/2 cup Milk
1/2 teaspoon Salt
1 Tablespoon Cinnamon
1 envelope Gelatin, plain
1/4 cup Water
3 Egg whites
1/4 cup Sugar

Cook pumpkin, egg yolks, 1/2 cup sugar, milk, salt, and cinnamon until thickened. Remove from heat and add gelatin that has been dissolved in cold water; allow to cool. Beat egg whites and 1/4 cup sugar; fold into cooled mixture. Pour over baked crust.

Top with Cool Whip.

The Perfect Springtime Treat: Strawberry Tossed Salad Recipe

There’s nothing I love more than the perfect salad. (Well, okay, maybe chocolate, but I digress…) I love it when I discover a salad that combines textures and flavors that don’t make sense…until you taste them together.

The recipe I’m sharing today does just that. It’ll make your mouth dance with flavor, and it’ll give you good reason to buy an extra pint of strawberries every time you go to the store. :) The original recipe came from Quick Cooking, and I’ve made one or two minor variations as noted below.

Strawberry Tossed Salad

6 cups torn Romaine lettuce (The original recipe calls for mixed salad greens, but my favorite is Romaine.)
1 pint of fresh strawberries, sliced
1 pkg (4 oz) crumbled feta cheese
1/4 cup sunflower kernels (or slivered almonds are good too!)
Balsamic vinaigrette (I like to either use Brianna’s blush wine vinaigrette or make my own dressing by combining equal parts olive oil with balsamic vinegar.)

Start by combining all the ingredients except the dressing. Just before serving, toss with the dressing until coated. (Makes 4-6 servings)
