Who doesn’t love a good breakfast at Christmastime? Me too!
But it sure does make it hard to keep the diet under wraps when most of our yummy breakfast foods are loaded with calories.
Here’s a healthy pancake recipe that my family loves. Instead of regular flour, it has whole wheat flour for added fiber. And instead of sugar, it uses honey as a natural sweetener. The original recipe comes from Taste of Home, but I’ve made a couple tweaks (as outlined below).
Cinnamon Apple Pancakes
2 cups whole wheat flour
4 teaspoons baking powder
2 teaspoons ground cinnamon (The original recipe calls for 1 teaspoon, but I always follow my mama’s advice and double the cinnamon. :))
1/2 teaspoon salt
2 eggs, lightly beaten
2-1/2 to 3 cups fat-free milk (The original recipe calls for 2 cups, but it turned out a little too thick for our tastes. Feel free to experiment with whatever works for you.)
2 tablespoons honey
1 tablespoon canola oil
1 medium apple, peeled, cored and chopped
In a large bowl, combine the flour, baking powder, cinnamon and salt. Combine the eggs, milk, honey and oil; stir into dry ingredients just until moistened. Add apple. Pour batter by 1/3 cupfuls onto a hot nonstick skillet coated with nonstick cooking spray. Turn when bubbles form on top; cook until second side is golden brown.
Makes 12 pancakes.
Nutrition facts per pancake: 123 calories, 2.5 g fat, 208 mg sodium, 21 g carbohydrate, 2.5 g fiber.
