I don’t know about you, but I’m already reveling in the season of pumpkin. Yum!
The recipe I’m sharing today isn’t necessarily low-calorie and it isn’t the easiest thing in the world to make. But rest assured, it will be worth it in the end! Oh yes, my friends, you will thank me when you taste this stuff.
Pumpkin Torte
(This is a family recipe, but the photo above is from a similar recipe from Taste of Home Magazine. I’m sure theirs is equally as good.
)
Crust:
24 Graham crackers – crushed (use full double crackers)
1/3 cup Sugar
1/2 cup Margarine, melted
Mix the three ingredients and press into 9 x 13 pan.
Next layer:
2 Eggs, beaten
3/4 cup Sugar
8 oz Cream cheese
Mix the three ingredients together; pour over crust. Bake at 350 degrees for 20 minutes.
Pumpkin layer:
2 cups Pumpkin
3 Egg yolks
1/2 cup Sugar
1/2 cup Milk
1/2 teaspoon Salt
1 Tablespoon Cinnamon
1 envelope Gelatin, plain
1/4 cup Water
3 Egg whites
1/4 cup Sugar
Cook pumpkin, egg yolks, 1/2 cup sugar, milk, salt, and cinnamon until thickened. Remove from heat and add gelatin that has been dissolved in cold water; allow to cool. Beat egg whites and 1/4 cup sugar; fold into cooled mixture. Pour over baked crust.
Top with Cool Whip.

I’ve only started eating pumpkin pie the last few years. It’s growing on me. This recipe sounds good.

My husband and my kids LOVE pumpkin pie, pudding etc. Me, I’m not such a fan – but this dessert might just make me change my mind.
